Light crispy premade fillo (sometimes spelled phyllo) shells are filled with a cube of creamy brie cheese and topped with a dollop of tart festive cranberry sauce. These elegant and delicious cranberry brie appetizers will wow your family and friends, and they will never guess how easy they are to make.

  • Cranberry sauce: a holiday staple, you can use either purchased or homemade.
  • Brie cheese: melted, creamy brie cheese and cranberry topping are a match made in heaven.
  • Premade frozen filo (or sometimes spelled phyllo) shells: light, flaky layers of dough are formed into mini pastry cups, then fully baked andfrozen. These delectable tart shells are versatile and the perfect vessel to hold the brie and cranberry sauce.

How to make them:

  1. Preheat the oven to 350 degrees F.
  2. Cut the brie into one-half inch squares. Cranberry Brie Bites Recipe - Three Ingredients | gritsandpinecones.com (3)

Sharon’s Tips:

  • To make Cranberry Brie Bites ahead, make them according to the directions, but do not bake. Place the filled filo shells back in the tray they came in and cover tightly with plastic wrap. Place the tray back in the box and freeze for up to three months. Allow the bites to thaw before baking and bake as directed.
  • Pepper jelly, fig preserves, honey, or your favorite jam or preserves can be substituted for the cranberry sauce.
  • You can make a delicious homemade cranberry sauce by combining one cup of water, one cup of sugar, and a 12 oz bag of fresh cranberries in a saucepan over high heat. Bring to a boil, reduce the heat to medium, and cook for 10 minutes. Cool and store covered in the refrigerator for up to two weeks.
  • You can substitute puff pastry or crescent roll dough for the mini filo shells. Simply cut the pastry into small squares, and place it into mini muffin cups. Then, follow the rest of the recipe. You may need to add a few minutes to the cooking time.
  • Brie rind is edible, and you can leave it on or remove it before cutting the brie into cubes.
  • Leftovers can be stored covered in the refrigerator for two to three days. To reheat, place them in a 350-degree oven for a few minutes. Do not reheat them in the microwave.

Hi Sharon! Can I use Phyllo dough and cut it? None of the grocery stores have them in stock!

Hey Brianna, yes, you can use puff pastry but the preparation is a little different. You will need to cut the pastry sheets into small squares. Then, place them in a mini-muffin pan and press down to fit them in. Use a fork to poke a few holes in the bottom of each one. Add the brie and cranberry sauce and bake for 18-20 minutes at 375 degrees F. Let them cool in the pan for a few minutes and then enjoy!
      I hope you enjoy them!

FAQs

How do you eat brie bites? ›

Make sure to cut it into wedges, rather than slicing it as you would a block of hard cheese. You won't need to spread Brie to enjoy it — just grab it right off the cheese board. You and your guests can cut a small piece and pair it with a bite of crusty bread (especially a baguette) or some dried fruit.

Can you bake brie more than once? ›

can you reheat baked Brie? Yes, you can reheat it in the microwave, start with 30 seconds and go from there. You can also re-warm it in a low 300F oven until soft again. Don't do this more than once, however, or the cheese can get rubbery.

How do you make brie taste better? ›

What does brie cheese go well with? Seriously so much. You can pair it with something sweet like honey, jam, or berries, or you can go more savory with nuts, veggies, or red pepper jelly.

Can you eat brie bites cold? ›

Store baked cranberry Brie bites in an airtight container in the fridge for up to three days. Enjoy them cold or reheat in the oven or microwave.

Which jam goes best with brie? ›

Brie cheese is the perfect partner to jam! It pairs beautifully with jam varieties, such as: fig, apricot, blackberry, boysenberry or cherry jam.

Should I remove the rind from brie before baking? ›

Do you take the rind off before baking? Keep the rind on, as it will help the cheese hold its shape so it doesn't all melt out. The rind is also edible, so you can enjoy it with the melted cheese, or simply remove the top layer after baking and dunk in crusty bread like a fondue.

What kind of jelly goes with brie? ›

A great fig jam, apricot, spiced apple, onion, pepper jelly, mixed berry… and a great sparkling wine would compliment it either way. As others have said, pretty much any good, fruity jam will pair with brie, or with other cheeses.

Are you supposed to eat the casing on brie? ›

Yes, the soft “crust” of brie, called a bloomy rind, is edible. It grows when the beneficial molds and bacteria used in making cheese are sprayed onto the surface of the cheese before aging. The mold then produces enzymes which help the cheese ripen from the outside in (opposite of how hard cheeses ripen).

Do you heat brie before eating? ›

Serve Brie either at room temperature or warmed (never chilled), to bring out its creamy texture.

Should you eat the casing on brie? ›

Yes, the bloomy rind is completely safe to eat and even keeps the inside safe from any potentially unwanted microorganisms during production. The rind on Brie not only protects and encases the cheese – it also adds a subtle, earthy flavor. With a soft and tender texture, it is meant to complement the paste inside.

What do brie cheese bites taste like? ›

Supreme Brie Bites are small wonders of creamy decadence. Each bite is supremely creamy, rich & buttery.
