Best bundt cake recipes start with the pan

Nordic Ware trademarked the ring shaped cake molds in the 1950s. No one knows for sure where the name came from, but the cakes are patterned after traditional European Gugelhupf. Bundts became all the rage in the US after a cake called ‘The Tunnel of Fudge’ won the 1966 Pillsbury Bake Off contest ~ and pan sales exploded. Fall is a great time to get back into Bundts, and they’re a breeze as long as you keep a few things in mind…

  • Replace old, worn, or scratched pans, and invest in a sturdy non stick bundt. Steel is best. Make sure it’s non-stick, because even though you’ll be prepping your pan, you’re gonna need the extra help. Don’t bother with glass, ceramic, or silicone, they won’t work as well. And avoid supermarket pans, they won’t hold up.

Best bundt pan to buy?

  • This classic Nordic Ware bundt is a great choice if you’re new to bund-ting or need to upgrade. It’s won numerous awards for best bundt pan, and it’s under $30 on Amazon.

  • Go for at least a 10 cup capacity, that’s the standard for most recipes.
  • Don’t put your pan in the dishwasher, you can damage the surface. Wash in hot soapy water and use a toothbrush for crevice cleaning.
  • Dense, structured recipes like loaf cakes, quick breads, and pound cakes do best in a bundt pan. Steer clear of light or delicate cakes. A standard 2 layer boxed cake mix will work in a bundt pan.

Pan prep is essential for a great bundt cake

  • Butter AND flour your pan before filling. Use a pastry brush to paint on softened (or melted) butter or shortening into every nook and cranny. Then dust with flour. If your cake is chocolate, dust with cocoa. You can even dust it with sugar. DON”T rely on baking spray. If you’re interested you can make your own homemade pan release.
  • Fill your pan no more than about 2/3 full with batter. If you over fill the pan it can overflow as it bakes, and can become very difficult to remove, as well.
  • Let the cake cool for 15 minutes on a rack after baking. The cake will naturally start to pull away from the sides of the pan. If you want to help it along you can run a small knife down along the top edge and around the ‘neck’. Put a plate over the pan and firmly overturn the cake and pan. Gently check to see if the cake has released before lifting the pan off.
  • Forgot to prep and your cake stuck? Try putting the cake back in the oven (after it’s been turned off) the gentle heat may help loosen the cake. Some people swear by wrapping the pan in a hot steaming towel for the same reason. Other than that, you’re on your own, I’ve tried every trick under the sun and nothing works for me. That’s why I’m a stickler for good pan prep. Maybe you’ll let me know in the comments if you’ve got a great tip!

FAQs

Master the Art of the Perfect Bundt • Recipes + Tips!? ›

Always allow your ingredients—such as eggs, butter, and dairy—to reach room temperature. This step is vital and ensures even mixing and a smooth batter. It also ensures that the ingredients blend effectively and prevents the cake from splitting while baking, resulting in a uniform and airy cake texture.

What is the secret to a perfect Bundt cake? ›

Grease your pan with shortening and dust with flour

The best tip Catherine could give any Bundt baker is to grease the pan with shortening and dust with flour—no butter here! “You don't want to use butter here. The milk solids in it can cause the cake to stick when it bakes,” Catherine advises.

How long do you let a Bundt cake cool before flipping? ›

Allow the Cake to Cool

Once you've cooked your bundt cake and removed it from the oven, allow it to cool in the pan for 10 minutes. Then place a wire cooling rack over the base of the cake and invert the pan to release.

Is it better to grease and flour a Bundt pan? ›

The Classic Method: Fat Plus Flour

The fat and flour bake into a protective barrier around the cake, almost guaranteeing the cake's release. Pro tip: Liquid fat (melted butter or oil) does a better job getting inside nooks and crannies of Bundt pans. Sugar can also be used in place of the flour for coating.

How do you make a Bundt cake less dense? ›

Add Sour Cream

To help prevent a dry, dense cake, let's add a creamy and light wet ingredient. Milk is usually required in a cake recipe to thin out the batter and lighten up the crumb, but sour cream is often overlooked. In addition to milk, add a Tablespoon or 2 of sour cream.

How do you bake a Bundt cake evenly? ›

Bundt cakes rise in the oven just like any other cake. They bake upside down, so the top becomes the bottom when you turn it out of the pan. You can minimize the rounded bottom by pushing the batter to the inner and outer edges of the pan before baking. That way when the center rises you get a more even profile.

Can you use Pam to grease a bundt pan? ›

Please do NOT use a regular cooking spray because it tends to leave a sticky residue on the pan, and the cake may stick; also, the residue left on the pan may be very difficult to clean completely, making it more likely that future cakes will stick.

Should I let a Bundt cake cool before removing from pan? ›

After removing from the oven, place the pan on a wire rack and let cool; your recipe will specify the required time, usually from 10-20 minutes. This allows the cake to become firm enough to remove from the pan without breaking apart. Cooling too long in the pan will cause the cake to be damp and stick to the pan.

How do you make a Bundt cake rise higher? ›

So with that in mind, here are our tips:
  1. Add a leavening agent to the flour. ...
  2. Make sure your butter is room temperature, and beat the butter and sugar together until properly creamed. ...
  3. Be careful with the cake batter. ...
  4. Check your oven is at the correct temperature.

Can I use vegetable oil to grease bundt pan? ›

When making a bundt or tube cake, brush the sides and bottom with three tablespoons of vegetable oil. Then sprinkle with 1/3 cup granulated sugar. Not only will the cake pop right out but it will now have a slightly sparkly, lightly crunchy coating that is quite yum.

Why does my cake stick to the bundt pan? ›

The milk solids in butter can act like glue, encouraging cake batter to stick to the pan. (You always butter your pan, and your cake never sticks? See tip #1, above). If your pan is particularly intricate, use a pastry brush to apply melted shortening to all its nooks and crannies.

Is oil or butter better for bundt cake? ›

Does it matter if you use oil or butter for a cake? The texture of cakes made with oil is—in general—superior to the texture of cakes made with butter. Oil cakes tend to bake up loftier with a more even crumb and stay moist and tender far longer than cakes made with butter. ...

Why is the bottom of my bundt cake not flat? ›

Sometimes Bundt pans can cause your cake to have a domed bottom, which means the cake won't lay flat. To avoid this, Dalquist says to turn the oven temperature down 25 degrees from what the recipe calls for. "This method needs a little more baking time, but not substantial, and creates an even cake," she explains.

Do you use oil or butter for bundt cake? ›

Butter is a great ingredient for adding flavor and richness to a cake. However, it can also make a cake dense and heavy if used in excess. Vegetable oil, on the other hand, is a lighter ingredient that helps to keep the cake moist and fluffy.

Should a Bundt cake be cooled upside down? ›

Let the cake rest for 5 minutes once you remove it from the oven. Then, flip the cake onto a cooling rack upside down and let it rest for about 5 minutes before you remove the pan. A little trick here is to use a grid cooling rack, not one that has big gaps.

Do you flip a Bundt cake right away? ›

When you remove your cake from the oven, don't flip it out of the pan right away! Instead, let the cake cool for ten minutes in the pan. Then, placing the wire rack over the base of the cake, invert the pan. Peek under the wire rack and see if the cake has dropped out.
